Easy recipe for red wine Rooster meal (Coq au Vin) | Wine and Chill

What a better way to celebrate Rooster year than eating some Rooster with red wine? And I mean red wine not only to drink with but also to cook with the Rooster.

It's relatively cheap and easy to complete. It should take thirty minutes to prepare the dish and expect two hours of cooking time. Try to buy some organic food products if you can in order to consume more responsibly.

 

LIST OF INGREDIENTS

  • One 3 kg rooster, preferably already cut in pieces.
  • One bottle of full-bodied red wine with strong tannins
  • 200 g of pork lards
  • 300 g of common mushrooms (the big white one if you prefer). Don't use Chinese mushrooms since their strong flavors would strongly alter the taste of your dish
  • 2 big sliced carrots
  • 3 cloves of garlic
  • 1 bouquet garni (mix of fresh thymes, parsley, and rosemary)
  • 1 minced onion
  • 1 spoon of black pepper grains
  • 5 cl of cognac (optional, alternatively you can use whiskey)
  • 50 cl of brown stock
  • 3 spoons of olive oil (extra virgin)
  • 1 big spoon of flour
  • salt and peppers

INSTRUCTIONS

1. The day before: Let the rooster marinate with the red wine, onions, carrots, bouquet garni and pepper grains. Cover your dish and let it cool in the fridge overnight.
2. On the day itself, serve yourself a glass of red wine and filter out the juice and keep it for later.
3. Start by boiling some oil in a casserole and throw the meat and give them a nice gold shade on each side.
4. Take out the meat and now proceed do the same with the vegetables.
5. Lower the power, then add the flour and make sure all the vegetables are covered with it.
6. Put back the meat in the casserole along with the vegetables.
7. Add the garlic, fire the Cognac (or the whiskey), add the juice and the brown stock.
8. Make it boil, cover the casserole then put the power to the minimum and let it cook for two hours and a half.
9. Mince the mushrooms and fry them a little bit in a pan with the pork lard
for five to ten minutes.
10. Add the results in the casserole 15 minutes before serving the rooster.
11. Taste and adjust with salt and pepper before serving.
 

If you feel like it, you can add some potatoes. As a good Asian, I would recommend using a rice cooker to prepare some fragrant Thai rice. Yummy! Enjoy! Take some pictures of your meal and tell us if you liked the recipe.
